In answer to your question, people could ride mountain bikes or cross bikes for the race. Really, whatever you wanted, but I wouldn't want a road bike on those surfaces. The first year I did Dirty Kanza, I rode a mountain bike with skinnier gravel tires, last year I did it on a cross bike. I don't think the frame made a huge difference for me, though I imagine the more aggressive positioning on a cross bike would help the fast racers.
